The demo is cool, but the science is very poor. First of all, it's not ice. You're creating a supersaturated solution of sodium acetate, which then crystallizes out of solution. It looks like ice, but it isn't. Second, the text says, "the reaction is exothermic." It's not a reaction. Nothing is reacting. Yes, it's exothermic. If you're going to make science demos, why not at least get the fucking science right?

You can make the Sodium Acetate needed for the experiment by (slowly) mixing vinegar and baking soda, then boiling off the the water. Instructions here: http://www.instructables.com/id/Sodium-Acetate/
