I'm guessing that the light reflected from the laser on the surface it is being pointed at is being constantly measured. When it is pointing at white paper, the majority of the light is reflected. However, when it points at black (or the guys hand), a substantial amount of the laser's light is absorbed by the surface and this signals that the laser has hit a "wall". I would love to get my hands on one of these and play around with it.
