Interesting. I think social scrutiny would enforce some payment. Can you imagine being in good attire and not even bothering to pay in front of other customers?

This is an AMAZING concept...great article. I am glad this idea is spreading from musicians to food, as it's a concept ripe to flourish in our current crap economy. Wow, I had no idea this even existed!
