The peeling method left much to be desired and wasted to the compost. If you like them peeled, use a potato peeler and you'll have more potato to eat. I usually like the peel on as it imparts more flavour. I just scrub them well. Grapeseed oil is an excellent alternative to peanut oil which is better than olive oil in high temperature cooking.

Very nice video. I can't use Peanut oil and it says no Olive oil.

This is a great video for those not familiar with the method! Produced crispy and mostly healthy fries with a fair bit of effort and time. The oven method produces nice crispy and hardly greasy fries in 30 minutes vs. 10 minutes for the deep fry method. Deep frying with preseasoned fries usually dirties your oil pretty quick, though. Tasty!
