This could probably made a lot better with a simple addition/substitution... but it'd take some testing (due to increased sugar messing with the consistency of the cake) which I don't know if I'll remember to do... BUT, couldn't these be easily given a bit of peach flavor by working in peach juice/puree/cider into the recipe (even if it'd need to be cooked down/evaporated) and maybe some minced up candied peaches?... then again, I've always preferred fritters to cupcakes and doughnuts, so it's probably showing...
