Mmm. I'd do without the canola oil and fry them in lard. That's right, beautiful non-hydrogenated lard from foraged hogs.

Evil! They look delicious. Did you know you can make a vegan approximation of buttermilk by adding a tablespoon of apple cider vinegar to a cup of soy/rice/almond milk?
