The very best chefs in the world are proponents of molecular gastronomy. I've eaten at The Fat Duck in Bray (England), whose proprietor, Heston Blumenthal, advocates exactly this kind of slow-cook method for preparing meat. However, he browns the meat before putting in the oven --- using a blow-torch!

Are they trying to turn me into a vegetarian, with this clinical, almost "medical" description of the cooking process, accompanied by a picture of a hunk of meat that looks more like a raw turd? One more visit to this site and I will never eat meat again. Again!

This test was also done on the Food Network TV show "Good Eats." It is always a good thing when you see experiments retested to insure integrity :D
