One of my better shots of the planet Saturn

First, you get some green chile''s roasted by a vendor. We have a distributor that drives down to Hatch, New Mexico and brings them back to Denver.

They put the green peppers in a wire mesh drum that rotates with a propane fire under it. After several minutes, the waxy green skin gets charred and burned.

This is dumped in a plastic bag---after waiting a couple of hours, the steam softens the burnt skin--and it comes off easily under a stream of water at the sink.








Each pepper is rinsed as the burnt outside skin is rubbed off, leaving the stem.






Chopping off the stem, then rinse out the seeds that are inside (where the 'hot' remains if you leave them in).





As the season gets late, the peppers turn from green to red. Once they start showing red, the Hatch-New Mexico distributor stops bringing them to Denver.






Here is the finished product....ready to be put into vacuum seal bags and tossed into the freezer...to be used all year long.







Mmmmmmm......I wish you could experience the wonderful roasted smell coming off this pepper.....Ahhhhh....
