I cook for at least 6 and my brother brought me this mini version from France grrrr his idea of a joke
at least there are a couple of recipes to fit (hubby and me) lol Cupid's Salmon
For 2 people - Preparation :10 minutes - Cooking time: approx 20 minutes
The market:
2 small, but thick fillets of fresh salmon
Ten cherry tomatoes
10 fresh button mushrooms
Garlic
2 sprigs of dill
Olive oil
Lemon juice
Salt and pepper
Preheat oven to 350F
Cut the cherry tomatoes in two. Slice the mushrooms. Place the fillet
of salmon in center of each mini cocotte and arrange the tomatoes and
mushrooms around it. Add a sprig of dill, a dash of pressed garlic, a
drop or two of lemon juice. Sprinkle with salt and pepper and finish
with a little olive oil. Place the lid on each cocotte and bake in the
oven for 20 to 25 minutes.
