If not, take a 6-pack of beer and mix with 1 cup kosher salt, a couple of bay leaves, 1 tbsp black peppercorns, 1 tsp nutmeg and mix well to dissolve the salt. In a very large container cover the rinsed and dried turkey with the brine. If not covered competently, add water to cover the turkey. Weight it down to keep from floating up.
