Oh. My. God. If you live in NYC, go here right now, don't even bother locking your door or putting on pants. If you cannot possibly go to the store, where they will FEED YOU SAMPLES, and are VERY NICE AND HELPFUL (in NY--gasp!), then by george you should order some cheese and have it delivered. May I recommend anything that was left in a cave for several years.
P.S. If you'd like to send me on one of the cheese-making vacations listed on the site, I mentioned earlier that my half-birthday is coming up soon. Just let me know which days I should take off from work.

anybody having trouble finding the cheeses called for in recipes..these guys are based in NY.
